Our Story…

In the US, the focus of Mexican food is what goes into the tortilla and quantity. In Mesoamerica, there is a mutual appreciation for all aspects of the dish but especially for the masa, the tortilla, and the differences in flavors and quality are astonishing. The first time my husband, Kevin, visited Mexico we stopped by my Abuelita’s home in Mexico City for dinner. His impression of my culture’s food changed that day and we both knew this was big and something we were going to change.

A year later, the Journey began through what felt like fate during a trip to Mexico. We were dining and talking up our idea to a waiter who ended up knowing and connecting us to a Mexico City tortilla manufacturer focused on bringing back the Mesoamerica original corn process called nixtamalization. Little did we know that the introduction would result in becoming apprentices and create a new appreciation for my land and my ancestor’s sacred food staple. His name was Santiago, co-founder of a tortilla manufacturer in Mexico City, Maizajo. He taught us the ancient heirloom varieties, how to ethically source these varieties from local farmers, and the traditional methods of processing the corn. Today, we now have a tortilleria focused on exactly this. We have brought Mesoamerica’s heirloom corn and my ancestor’s process to our home in Dixon, CA. Our mission is to heighten the bar for Mexico’s staple food, Masa, by using original Mesoamerica ingredients grown ethically for both farmers and the land. We are honored to bring this treasure and super-food to our home table and to yours.

Why is it unique.

There is no other tortilla manufacturer in the area that serves freshly cooked tortilla products made from rare ancient corn varieties direct to the consumer. The corn varieties we supply are the same used precolonial ensuring super nutrients such as antioxidants, fiber, and protein. Additionally and perhaps most importantly, our corn is ethically sourced from local farmers, sustainable, and fair trade.
